Overview
Artichokes take careful trimming before cooking: remove the tough leaves and fuzzy choke so the bag holds only edible hearts and tender stem. A wine-and-vinegar cooking liquid keeps the flavor bright.
This guide follows the Great British Chefs prepared-globe-artichoke method and serves the hearts warm. It does not turn the acid in the liquid into a storage or canning method.

Get it ready
- Rinse the artichokes. Trim pointed tips, tough leaves, and woody stem skin, then remove the fuzzy choke completely.
- For four artichokes, combine 250 milliliters water, 250 milliliters white wine, 60 milliliters white wine vinegar, and herbs in a saucepan; bring to a boil.
- Cool the liquid before bagging, strain, and mix with 100 milliliters olive oil. Keep prepared hearts cold while waiting.
- Bag the hearts with the cooled liquid, protect the plastic from sharp edges, seal, and cook in the fully heated bath for the listed time.
Finish and serve
- Open the bag and lift out the artichoke hearts. Discard used herbs and the cooking liquid.
- Test the thickest part of a heart with a knife. Finish any firm pieces in a covered pan until tender.
- Slice or quarter as wanted, then warm briefly in a skillet with fresh olive oil.
- Add clean herbs and lemon to taste, and serve immediately.
