LearnSousVide publishes general cooking information for educational use. It is not a substitute for appliance instructions, current public-health advice, or help from a professional who knows a diner's medical needs. A guide describes one way to cook a particular food; results can still vary between appliances and kitchens.
Food-safety responsibility
Use clean equipment and a suitable food thermometer. Follow the whole guide, including the food type, thickness, starting temperature, cook time, and serving directions. If your food does not match those details, follow the package directions or use the government thermometer temperature on the safety page.
Variation and corrections
