Ingredients
- •2 lbs al pastor pork (prepared using traditional recipe above)
- •1.5 cups fresh pineapple chunks
- •12 corn tortillas
- •1 small red onion, thinly sliced
- •¼ cup white vinegar
- •1 tbsp sugar
- •½ tsp salt
- •Fresh cilantro leaves
- •Lime wedges
- •Your favorite salsa roja or salsa verde

Make pickled onions first (can be done up to 3 days ahead)

Combine sliced onion, vinegar, sugar, and salt in a bowl

Let sit at room temperature for 30 min, then refrigerate

Prepare al pastor pork using traditional recipe

After cooking sous vide, sear pork in batches until charred

In same hot pan, add pineapple chunks

Cook for 2–3 min per side until deeply caramelized

Chop pork into small pieces

Warm tortillas over gas flame or in a dry skillet

Build tacos with pork, caramelized pineapple, pickled onions, and fresh cilantro

Serve with lime wedges and salsa
