Ingredients
- •4 tonkatsu cutlets (prepared using classic recipe)
- •2 tbsp vegetable oil
- •1 large onion, sliced
- •2 large carrots, diced
- •2 large potatoes, diced
- •3 cups chicken broth
- •1 package Japanese curry roux (mild, medium, or hot)
- •4 cups cooked white rice

Prepare tonkatsu using classic recipe

While pork cooks, make curry

Heat oil in large pot and sauté onions until translucent

Add carrots and potatoes, cook 5 min

Add chicken broth and bring to boil

Reduce heat and simmer 15 min until vegetables are tender

Turn off heat and add curry roux, stirring until dissolved

Simmer 5 more minutes until thickened

To serve, place rice in bowl, ladle curry over rice

Top with sliced tonkatsu cutlet

Optionally drizzle with tonkatsu sauce
