- •1 onion, diced
- •3 carrots, diced
- •3 celery stalks, diced
- •6 cloves garlic, minced
- •2 cans (15 oz each) cannellini beans, drained
- •4 cups chicken broth
- •1 can (14 oz) diced tomatoes
- •4 cups kale, chopped
- •2 bay leaves
- •1 tsp dried thyme
- •½ tsp dried rosemary
- •Salt and pepper
- •Parmesan rind (optional)
- •Crusty bread for serving

Vacuum seal sausages

Sous vide at 142°F (61°C) for 1 h 30 min

Remove sausages and slice into rounds

Heat olive oil in large pot

Brown sausage rounds, remove and set aside

Add onion, carrots, and celery, cook 8 min

Add garlic, cook 1 min

Add beans, broth, tomatoes, bay leaves, thyme, and rosemary

Add Parmesan rind if using

Bring to simmer, cook 15 min

Return sausages to pot
