Ingredients
- •8 sweet Italian sausage links
- •3 bell peppers (red, yellow, green), sliced
- •2 large onions, sliced
- •4 cloves garlic, sliced
- •3 tbsp olive oil
- •½ cup chicken broth or white wine
- •1 tsp dried oregano
- •½ tsp red pepper flakes (optional)
- •Salt and pepper
- •Fresh basil for garnish
- •For serving: Italian rolls, pasta, or polenta
Instructions
Vacuum seal sausage links
Sous vide at 142°F (61°C) for 1 h 30 min
While sausages cook, heat olive oil in large skillet
Add sliced peppers and onions
Cook over medium heat until softened and caramelized, 20 min
Add garlic, oregano, and red pepper flakes, cook 2 min
Add broth or wine and simmer 5 min
Season with salt and pepper
Remove sausages from bag and pat dry
Heat same skillet over medium-high heat
Sear sausages until browned on all sides, 6–8 min
Slice sausages on bias if desired
Return sausages to peppers and onions
Toss to combine
Garnish with fresh basil
Serve on Italian rolls, over pasta, or with polenta
