Ingredients
- •2 lbs ground lamb
- •1 medium onion, finely minced and squeezed dry
- •½ cup fresh flat-leaf parsley, finely chopped
- •4 cloves garlic, finely grated
- •2 tsp Lebanese seven-spice blend
- •2 tsp kosher salt
- •1 tsp black pepper
- •¼ tsp ground cinnamon
- •For serving:
- •Warm pita bread
- •Toum (garlic sauce)
- •Tahini sauce
- •Pickled turnips
- •Sliced tomatoes, onions, and fresh mint
Instructions

Combine lamb, squeezed onion, parsley, garlic, seven-spice, salt, pepper, and cinnamon.

Mix until sticky. Shape into 8 flat oval patties or press onto flat skewers.

Place in vacuum-seal bags in a single layer. Seal gently.

Preheat sous vide bath to 132°F (56°C). Cook for 2 h.

When done, remove and pat dry.

Grill or broil 60–90 sec per side until charred.

Serve in warm pita with toum, tahini, pickled turnips, and fresh vegetables.
Notes
- •Squeeze the onion COMPLETELY dry or the mixture won't hold on the grill
- •Seven-spice includes allspice, cinnamon, pepper, cloves, nutmeg, coriander, ginger
- •Flat metal skewers prevent spinning
- •In Beirut these are wrapped with everything piled inside
