Ingredients
- •1 cup steel-cut oats
- •2 cups whole milk (or plant-based milk)
- •2 cups water
- •¼ cup brown sugar
- •1 tsp ground cinnamon
- •½ tsp vanilla extract
- •¼ tsp salt
- •2 tbsp unsalted butter
- •Toppings - sliced bananas, berries, chopped nuts, maple syrup, extra brown sugar
Instructions
In a large bowl, combine steel-cut oats, milk, water, brown sugar, cinnamon, vanilla, and salt
Stir well to combine all ingredients evenly
Divide mixture evenly among 4 wide-mouth mason jars (8–12 oz each)
Add 1/2 tablespoon butter to the top of each jar
Finger-tighten lids on jars (do not seal completely - leave slightly loose for pressure release)
Preheat sous vide water bath to 194°F (90°C)
Carefully place jars in water bath, ensuring they are fully submerged
Cook for 8 h (perfect for overnight - start before bed, wake to breakfast)
When cook time is complete, carefully remove jars from water bath
Shake each jar vigorously for 10–15 sec to distribute starches and create creamy texture
Remove lids and stir oatmeal - it should be perfectly creamy and tender
Serve immediately topped with sliced bananas, berries, chopped nuts, or extra maple syrup
For meal prep, let jars cool and refrigerate for up to 5 days
To reheat, microwave for 60–90 sec with a splash of milk, or warm on stovetop
