Ingredients
- •4 sea bass fillets (6 oz each)
- •¼ cup white miso paste
- •3 tbsp mirin
- •2 tbsp sake
- •2 tbsp sugar
- •1 tbsp soy sauce
- •2 tsp sesame oil
- •Toasted sesame seeds
- •Sliced green onions
- •For serving: steamed rice, sautéed spinach
Instructions

Whisk together miso, mirin, sake, sugar, soy sauce, and sesame oil

Marinate sea bass for 2 h, refrigerated

Remove from marinade, pat dry, reserve marinade

Vacuum seal fish

Sous vide at 127°F (53°C) for 45 min

Preheat broiler

Place fish on foil-lined sheet

Brush with reserved marinade

Broil 3–4 min until caramelized

Garnish with sesame seeds and green onions

Serve with rice and spinach
Notes
- •White miso is sweeter than red
- •Watch carefully under broiler - can burn quickly
- •Similar to famous miso black cod but with sea bass
