Ingredients
- •4 sea bass fillets (6 oz each)
- •¼ cup extra-virgin olive oil
- •Zest and juice of 2 lemons
- •4 cloves garlic, thinly sliced
- •2 tbsp fresh oregano, chopped
- •2 tbsp fresh parsley, chopped
- •1 tbsp fresh thyme leaves
- •Salt and pepper
- •Lemon wedges for serving
- •For serving: roasted potatoes, Greek salad
Instructions

Combine olive oil, lemon zest and juice, garlic, oregano, parsley, and thyme

Season sea bass with salt and pepper

Place in bag with herb-lemon mixture

Sous vide at 127°F (53°C) for 45 min

Remove from bag and pat dry (if searing skin)

Optional sear fish skin-side down for crispy skin

Plate fish and drizzle with cooking liquid

Garnish with fresh herbs

Serve with lemon wedges, potatoes, and salad
