The ideal temperature range is 120°–135°F / 49°–57°C, with 130°F / 54°C being the sweet spot for firm yet moist texture. Food Safety Notes
FDA recommends 145°F / 63°C for fish, but this overcooks delicate cod. Lower temperatures achieve equivalent safety through time-temperature pasteurization. At 120°F / 49°C, hold for at least thirty to forty minutes for proper pasteurization. At 130°F / 54°C, pasteurization occurs very quickly. Always use fresh fish from reputable sources and handle properly. Even a brief sear adds an additional safety margin. Use the freshest seafood available, keep everything chilled before cooking, and serve lower-than-130°F preparations immediately.

Prep & Bagging
- Pat cod fillets completely dry with paper towels
- Season with kosher salt and pepper 15 min before cooking
- Place each fillet in individual bag with small amount of olive oil or butter
- Add aromatics like lemon, herbs, or garlic if desired
- Seal gently using water displacement method—cod is delicate
- Ensure fillets are fully submerged without crushing
Finishing & Searing
- Remove cod from bags and pat gently dry with paper towels
- Heat skillet over medium heat with olive oil or butter
- Gently place fillets in pan without pressing
- Sear 1–2 min per side just to add light color
- For glazed preparations, brush with glaze during final 30 sec
- Serve immediately while warm
