Ingredients
- •8 boneless, skinless chicken thighs, cut in half
- •For gochujang marinade:
- •3 tbsp gochujang
- •2 tbsp soy sauce
- •1 tbsp gochugaru (Korean red pepper flakes)
- •1 tbsp sesame oil
- •1 tbsp rice wine (or mirin)
- •3 cloves garlic, minced
- •1 tbsp fresh ginger, grated
- •1 tbsp sugar
- •For stir-fry:
- •1 medium sweet potato, peeled and sliced 1/4 inch thick
- •¼ napa cabbage, chopped into 2-inch pieces
- •8 oz tteok (Korean rice cakes), soaked if dried
- •4 scallions, cut into 2-inch pieces
- •1 cup perilla leaves or shiso (optional)
- •2 tbsp neutral oil
- •Sesame seeds for garnish
- •Steamed white rice for serving
Instructions
Whisk together all gochujang marinade ingredients.
Toss halved chicken thighs in the marinade. Cover and refrigerate at least 1 h.
Place marinated chicken in vacuum-seal bags in a single layer with the marinade.
Seal and preheat sous vide bath to 168°F (76°C).
Submerge and cook for 8 h for silky confit texture.
About 15 min before serving, heat oil in a large skillet or griddle over high heat.
Add sliced sweet potato in a single layer. Cook 4–5 min per side until golden and tender.
When chicken is done, remove from bags. Reserve the gochujang cooking liquid.
Add chicken pieces to the skillet with the sweet potato. Sear 2–3 min until charred in spots.
Add cabbage, rice cakes, and scallions. Pour in the reserved gochujang liquid.
Toss everything together over high heat for 3–4 min until the cabbage wilts, rice cakes soften, and the sauce coats everything.
Sprinkle with sesame seeds and perilla leaves if using.
Serve sizzling from the skillet with steamed rice alongside.
Notes
- •Tteok (rice cakes) should be soaked in water for 30 min if using the dried variety
- •The sous vide chicken is already tender — the stir-fry is just for char and to combine with vegetables
- •In Chuncheon this is cooked on a communal griddle at the table — a cast iron skillet replicates the experience
