Ingredients
- •2 lbs flank steak
- •¼ cup fresh lime juice
- •¼ cup fresh orange juice
- •Zest of 1 orange
- •¼ cup olive oil
- •5 cloves garlic, minced
- •¼ cup fresh cilantro, chopped
- •2 tsp ground cumin
- •1 tsp chili powder
- •1 tsp kosher salt
- •½ tsp black pepper
- •¼ tsp cayenne pepper

Whisk together lime juice, orange juice, orange zest, olive oil, garlic, cilantro, cumin, chili powder, salt, black pepper, and cayenne

Place steak in zip-top bag with marinade

Refrigerate for 2–8 h

Preheat sous vide to 132°F (56°C)

Transfer steak and 3 tbsp marinade to vacuum bag or clean zip-top bag

Cook for 2 h 30 min

Remove, pat dry thoroughly

Sear on smoking-hot grill or cast iron for 45–60 sec per side

Rest 5 min, slice against the grain
