Ingredients
- •1.5 lbs large shrimp (16–20 count), peeled and deveined
- •2 tsp kosher salt
- •2 tsp chili powder
- •1 tsp ground cumin
- •½ tsp smoked paprika
- •¼ tsp cayenne pepper
- •3 cloves garlic, minced
- •Zest and juice of 2 limes
- •2 tbsp olive oil
- •2 cups green cabbage, thinly sliced
- •¼ cup fresh cilantro, chopped
- •1 ripe avocado
- •¼ cup sour cream or Greek yogurt
- •1 jalapeño, seeded and minced
- •8 small flour or corn tortillas
- •1 cup cherry tomatoes, halved
- •Lime wedges for serving
- •Hot sauce for serving
Instructions
Mix kosher salt, chili powder, cumin, smoked paprika, and cayenne in a small bowl
Pat shrimp dry and toss with spice mixture until evenly coated
Place seasoned shrimp in a vacuum-seal bag or zip-top bag with minced garlic, lime zest, and 1 tbsp olive oil
Remove air using vacuum sealer or water displacement method and seal
Preheat sous vide water bath to 142°F (61°C)
Submerge sealed bag in water bath
Cook for 18 min for firm, fully cooked shrimp
While shrimp cook, make cilantro slaw - toss cabbage with juice of 1 lime, chopped cilantro, and pinch of salt
Make avocado crema - blend avocado, sour cream, minced jalapeño, and juice of 1/2 lime until smooth, season with salt
When cook time is complete, remove shrimp from bag and pat dry
Heat a large skillet over medium-high heat with remaining 1 tbsp olive oil
Quick-sear shrimp for 30–45 sec per side just to get light char and warm through
Warm tortillas in a dry skillet or over gas flame until pliable and lightly charred
To assemble tacos - spread avocado crema on each tortilla
Add a handful of cilantro slaw
Top with 3–4 shrimp per taco
Add cherry tomato halves
Drizzle with extra lime juice and hot sauce if desired
Serve immediately with lime wedges on the side

- •Tails-off shrimp are easier to eat in tacos
- •The slaw can be made up to 2 h ahead and kept refrigerated
- •For crunchier tacos, lightly fry the tortillas before assembling
- •Avocado crema keeps for 1 day in the fridge with plastic wrap pressed directly on surface
