- •¼ cup soy sauce
- •2 tbsp fresh orange juice
- •2 tbsp fresh lime juice
- •2 tbsp mirin
- •1 tbsp grated fresh ginger
- •2 cloves garlic, minced
- •1 tsp sesame oil
- •2 tbsp butter
- •Orange and lime zest for garnish

Combine soy sauce, citrus juices, mirin, ginger, garlic, and sesame oil

Place black cod in bag with marinade

Sous vide at 122°F (50°C) for 50 min

Remove fish and strain liquid into small saucepan

Reduce liquid by half over medium-high heat

Whisk in butter

Plate fish and drizzle with glaze

Garnish with citrus zest
